Rainbow trout are normally harvested at portion size, which is around half a kilo. But this celebrity farm on the River Itchen makes a point of growing its fish to three kilos, which enables us to get several bone-free portions from each fish. The colour of the flesh is a vibrant orange that is spectacular.

 

The quality from this farm is outstanding and it's not just us saying that - Jamie Oliver and Yottam Ottolenghi think so too. The farm is a sustainability producer of trout and are defined as a 'net producer' - for example, they use under a tonne of fish food to raise a tonne of trout.

Chalkstream trout have a low impact on the surrounding environment. They have been working to reduce the amount of marine based feeds. Chalkstream also follow Global Gap farming practices.
